Amazing Turkey Gravy
Have to use turkey stock to make this amazing Turkey Gravy can't get any better.
- 6 cups turkey stock
- ½ cup dry white wine
- 1 cup yellow onion. diced about ½ an onion
- 4 cloves garlic minced
- 2 Tablespoons butter
- 2 teaspoons marmite
- 1 teaspoon rosemary salt or kosher salt
- 1/2 cup all-purpose flour
- 6 Tablespoons butter 1 stick
- Black pepper to taste
1) In a large saucepan over medium heat, melt 2 Tablespoons butter. Add the onion and cook for 5 minutes until softened. Add the garlic and continue to cook for 1 more minute or until fragrant.
2) Add the remaining 6 Tablespoons butter and flour. Cook the roux the 2 minutes or until the raw flour smell dissipates.
3) Add the wine and stock. Bring the gravy to a simmer, stirring occasionally.
4) Add the marmite and seasoning. Continue to cook the gravy until thickened. Keep warm until ready to serve.

In the end I landed on this recipe. While it sounds complicated it is actually quite easy to make. This white chili is loosely based on the Creamy White Chili recipe from Taste of Home. This recipe was created with help of my parents when I was 13 years old (22 years ago). I wanted a large cookie that had allot of stuff in it. We started with a chocolate chip cookie recipe and adapted it as we made more and more of them. My father took these recipes to his office and every time he did I completely sold out which covered the cost of the cookies. I also recall winning a cookie competition with this recipe. The thing that adds flavor to these cookies is the blended oatmeal. I will warn you, these cookies are anything but healthy as you will quickly find out!

This is not my first pork butt however, it is my first time making it on my new Ninja Woodfire Grill. The results are good however not as good as a 12 hour cook using a smoker or snake method on a charcoal grill. I will add more on how to slow cook using a charcoal grill if you do not have access to a smoker. I am not going to lie to you, this is not an exact science. You will need to pay attention to several factors that I have noted below. You can read more about the charcoal snake method below.

This chicken alfredo recipe is so simple and delicious you wont believe you have not tried it before! The original blackening seasoning is inspired by one of my all time favorite sites Chili Pepper Madness. Making your own alfredo sauce is simple and beats store bought. If you enjoy the taste of store bought alfredo sauce or don’t have time to make your own, Rao’s Roasted Garlic Alfredo Sauce is my personal favorite. You can find a recipe for classic blackened seasoning here. I have offered ways of making it less spicy if like my wife you have less spice tolerance. If making your own blackened season is not your thing no worries! You can use any premade blackened seasoning. One of my favorite blackened seasonings can be found here.

This recipe is adapted from Spending with Pennies website for Green Chili Recipe. This recipe is amazing on breakfast burritos, eggs, or just by itself! This recipe takes a while to cook but in the end it is worth the wait. This recipe makes a medium spiciness chili (see notes). Let me know your thoughts using the comments below!
Ti Malice Hot Sauce
This recipe was adapted from one of my favorite YouTube channels called Chili Pepper Madness from his Ti-Malice hot sauce, make sure to go to his channel to show him some love. For this recipe I used a bit more acidity than his to preserve in a can for shelf stable hot sauce. The result is sharp, slight fruity and super fiery! The original recipe uses piment bouc peppers common in Haitian culture foods but for this recipe you can just use habaneros. My only regret is that the use of lime while good is not the same flavor as Sour Oranges used in the historic version of this sauce
Short Rib Stuffed Shells
I honestly can’t take full credit for this recipe. This recipe comes from Guga Foods channel, be sure to go to his channel and show him some appreciation. This recipe is one of the most amazing I have made so far the ribs covered in a red wine reduction sauce is to die for! I will warn you this recipe is way more involved than you might think. I made the mistake of making spicy pickles while I was smoking the ribs all at 7:00 at night, the result was me barely being able to stand half way through cooking it and admittedly I don’t actually remember making the sauce.
