Equipment

  • 1 9x13 baking pan

Ingredients

  • 5 fresh peaches (about 4 cups)
  • 3/4 cup granulated sugar
  • 1/4 teaspoon salt
  • For the batter:
  • 6 Tablespoons butter
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 3/4 cup milk
  • 1 Tablespoons ground cinnamon

Instructions

  • We used fresh peaches but you can used canned if you want.
  • Wash and clean the peaches and sliced at x at the bottom through the skin of the peaches and the placed in a pot of boiling water.
  • Cook for 1 minute. Remove them and place into an ice bath for 30 seconds.
  • Add the sliced peaches, combine sugar and salt to a saucepan and stir.
  • Cook on medium heat for 2 minutes, until the sugar is dissolved.
  • Remove from heat and set aside.
  • Preheat oven to 350°.
  • Cube the butter into pieces and add to a 9x13 inch baking dish.
  • Place the pan in the oven while it preheats, to allow the butter to melt. DO NOT burn the butter.
  • Once the butter has melted, remove the pan from the oven.
  • Mix together the flour, sugar, baking powder, and salt. Add in the milk, until combined. Pour the mixture into the pan, over the melted butter and smooth until you have an even layer.
  • Gently add in the peaches and juice (or canned peaches, if using) over the batter. Sprinkle cinnamon generously over the top, but not too much.
  • Bake at 350° for about 38-40 minutes.
  • Serve while warm, with a scoop of vanilla ice cream, if desired.
