This is an old fashioned Peach Cobbler that's delicious and easy to make. Or if you want to update it and jazz it up a bit, you can toss some fresh raspberries with the peaches for a whole new level!

9 x 13 baking pan
Large pot of boiling water
Bowl of ice bath
Medium saucepan
Ingredients
5Fresh peachesor you can use canned
3/4cupgranulated sugar
1/4teaspoonsalt
For the batter:
6Tablespoonsbutter
1cupall-purpose flour
1cupgranulated sugar
2teaspoonsbaking powder
1/4teaspoonsalt
3/4cupmilk
1Tablespoonsground cinnamon
Instructions
Wash the peaches and cut a shallow X at the bottom through the skin of each. Then carefully place in a pot of boiling water.
Let cook for 1 minute. Remove them and place into an ice bath for 30 seconds.
As they cool, remove the skin and pit of each of the peaches, then slice (you should end up with about 4 cups of sliced peaches).
Add the sliced peaches to the saucepan. Stir in the sugar and salt. Cook on medium heat for 2 minutes, until the sugar is dissolved.
Remove from heat and set aside.
Preheat oven to 350°.
Cube the butter into pieces and add to a 9x13 inch baking dish.
Place the pan in the oven while it preheats, to allow the butter to melt. Watch it closely so that it doesn't burn.
Once the butter has melted, remove the pan from the oven.
In a medium bowl, mix together the flour, sugar, baking powder, and salt. Add in the milk, and stir until combined. Pour the mixture into the pan, over the melted butter and smooth until you have an even layer.
Gently add in the peaches (and juice if using canned peaches) over the batter. Lightly sprinkle cinnamon over the top, but not too much.
Bake at 350° for about 38-40 minutes.
Serve while warm, with a scoop of vanilla ice cream, if desired.
