I know I say it every time but due to my wife’s tree nut allergy she likes to have an easy way to make pancakes that don’t require a lot of time so we made this and it’s great if you can’t run out every time you want an easy quick way to make pancakes, hotcakes, etc.

Ingredients

  • 30 oz Ranch Style Beans 2 15 ounce cans, do not drain
  • 1 cup chicken stock
  • ½ cup sweet onion about ½ large onion
  • 2 chipotle chilies in adobo sauce chopped
  • 1 tbsp adobo sauce
  • 1 cup green bell pepper 1/2 green bell pepper, chopped
  • 2 cloves garlic minced
  • 1 pound ground turkey
  • 2/3 cup ketchup
  • 2 tablespoons Dijon mustard
  • ¼ cup brown sugar
  • 1 tablespoon smoked paprika
  • 2 tablespoons Worcestershire sauce
  • Salt and pepper to taste

Instructions

  • Preheat oven to 400° F (204° C).
  • in a medium Dutch oven over medium high heat, cook the ground turkey in a skillet until there is no more pink. Season with salt and pepper as needed.
  • Add the remaining ingredients. Stir to combine. Continue to cook for 5 minutes.
  • Cover and add to oven. Cook for 30-35 minutes to allow ingredients to come up to temp.

Notes

  • I used dark brown sugar but you can use light brown sugar if that is the only thing you have.
  • If you like the flavor feel free to use molasses starting a 1 Tablespoon.
  • This recipe was made in a Dutch oven but you can use whatever oven safe and stovetop safe vessel you choose just make sure it is large enough to hold all the ingredients
  • To be respectful of cost and calories, I used lean ground turkey (93% lean) but If ground beef is more your thing feel free to use that instead. Just make sure to drain the fat before adding the other ingredients.
