Eggs on Cheesy Toast

I realized this is probably been done a million times. We used our own cheesy bread recipe for this but you can use whatever type of bread you want to try and give you an easy breakfast if you are out of ideas if you haven’t been feeling well or if you want something easy. A meal doesn’t have to be super fancy every time or super complex sometimes it’s the simple things that are fantastic!

A meal doesn’t have to be super fancy every time or super complex sometimes it’s the simple things that are fantastic!

Ingredients

  • 4 eggs
  • 2 slices cheesy bread or choice of bread
  • 2 slices American cheese
  • 1 tablespoon of butter
  • salt and pepper to taste
  • splash of water

Instructions

  • We did scramble but you can do over easy eggs or sunny side up depending on your preference.
  • Whisk the eggs and add salt and pepper to taste, cook the eggs until they are about 60% done (they will still be shiny) for about 5 to 7 minutes.
  • Turn off the heat, but leave the pan on the burner add 1 or 2 slices of American cheese, a splash of water to add some moisture, and cover with the lid. (this allows the steam to cook the eggs to finish and lightly melts the cheese.)
  • Toast 2 slices of toast until lightly golden brown or toasted how you would like.
  • Once the toast is cooked add some butter on top of it and the cooked eggs and it’s ready to serve.

Notes

I have to say this tasted like eating Cheez-it crackers underneath some cheesy eggs was so easy to make and so tasty! It’s our new addiction.
