Eggs on Cheesy Toast

Part of the point of this recipe is to start with a dish that's really simple and basic and dress it up! You can take this recipe and make it your own breakfast special by adding cooked bacon or sausage, green onions, a different special cheese or toast, salsa, or whatever! Make it special and delicious!

Ingredients

  • 4 Eggs
  • 2 slices Cheesy bread or your choice of bread
  • 2 slices American cheese or cheddar or whatever you prefer
  • 1 tablespoon Butter
  • Salt and pepper to taste
  • Splash of water

Instructions

  • Whisk the eggs and add salt and pepper to taste. In a small saucepan, sprayed with nonstick spray, cook the eggs until they are about 60% done (they will still be shiny and loose) for about 5 to 7 minutes.
  • Turn off the heat, but leave the pan on the burner. Top with 1 or 2 slices of American cheese, a splash of water to add some moisture, and cover with the lid. (this allows the steam to cook the eggs to finish and lightly melts the cheese.)
  • Toast 2 slices of toast until lightly golden brown or toasted how you would like.
  • Once the toast is cooked add some butter on top of it and spoon on the cooked eggs and it’s ready to serve.

Notes

  • I have to say this tasted like eating Cheez-it crackers underneath some cheesy eggs was so easy to make and so tasty! It’s our new addiction.
  • We did scramble the eggs but you can do over easy eggs or sunny side up depending on your preference.
