Bacon Jam

Ingredients
- 1 pound bacon
- ½ cup sweet onion finely chopped (about ½ large onion)
- 3 cloves garlic finely diced (2 teaspoons)
- 2 Tablespoons water
- ½ cup dark brown sugar
- ¼ cup maple syrup
- 1 cup espresso coffee see notes
- ¼ cup apple cider vinegar
- 3 Tablespoons balsamic vinegar
- ½ teaspoon smoked paprika
- ½ teaspoon chili powder
- Salt and pepper to taste
Instructions
- Render bacon in large pot with lid over medium heat
- Place onions in the pot and continue to cook for 5 minutes or until translucent. Add the garlic and continue to cook for 1 minute.
- Add remaining ingredients. Bring to a simmer. Reduce heat to low and Cook for 50 to 60 minutes or until the jam becomes a thick paste.
- Remove from heat and allow to cool before placing in the fridge.
- I found a good local coffee roaster that sold espresso beans. I also added twice more coffee beans than I normally would. Lastly, my coffee machine has a setting for espresso however if yours does not roasting the coffee normally will do just fine.
Notes
It's a savory Jam for sure it's not for everyone but kinda like beef jerky.
