Salt and pepper to taste
Instructions
Render bacon in large pot with lid over medium heat.
Place onions in the pot and continue to cook for 5 minutes or until translucent. Add the garlic and continue to cook for 1 minute.
Add remaining ingredients. Bring to a simmer. Reduce heat to low and continue to simmer for 50 to 60 minutes or until the jam becomes a thick paste.
Remove from heat and allow to cool before placing in jars and putting in the fridge.
Notes
It's a savory jam that for sure is not for everyone, but kinda like beef jerky.
I found a good local coffee roaster that sold espresso beans. I also added twice more coffee beans than I normally would. Lastly, my coffee machine has a setting for espresso however if yours does not, roasting the coffee normally will do just fine.
