Jam and Bacon what could go wrong? Nothing its great as a savory taste not a sweet taste.
Ingredients
1poundbacon
½cupsweet onionfinely chopped (about ½ large onion)
3clovesgarlicfinely diced (2 teaspoons)
2Tablespoonswater
½cupdark brown sugar
¼cupmaple syrup
1cupespresso coffeesee notes
¼cupapple cider vinegar
3Tablespoonsbalsamic vinegar
½teaspoonsmoked paprika
½teaspoonchili powder
Salt and pepper to taste
Instructions
Render bacon in large pot with lid over medium heat
Place onions in the pot and continue to cook for 5 minutes or until translucent. Add the garlic and continue to cook for 1 minute.
Add remaining ingredients. Bring to a simmer. Reduce heat to low and Cook for 50 to 60 minutes or until the jam becomes a thick paste.
Remove from heat and allow to cool before placing in the fridge.
I found a good local coffee roaster that sold espresso beans. I also added twice more coffee beans than I normally would. Lastly, my coffee machine has a setting for espresso however if yours does not roasting the coffee normally will do just fine.

It's a savory Jam for sure it's not for everyone but kinda like beef jerky.
