Chicken Bacon Alfredo Pizza

This is so quick and easy to make and a nice filling evening meal. And of course add or change toppings according to what you have on hand or prefer!

Ingredients
- 1 pkg Red Lobster Cheddar Bay Biscuit Mix 11.3 ounces
- 1/2 cup Cheddar Cheese freshly grated
- 3/4 cup Cold Water
- 2-3 Tablespoons Olive Oil for spreading the dough out
- 4 Tablespoons Unsalted Butter
- 8 oz Chicken skinless breasts or thighs
- 1-2 Tablespoons Kinders Blackened Seasoning or Dan-o's Seasoning Original
- 8 oz Bacon cooked and crumbled
- 1 jar Alfredo Sauce 14.5 oz Jar, or homemade
- 3-4 cups Freshly grated Mozzarella Cheese
Instructions
- Preheat the oven to 425° degrees. Spray a 10 × 15 rimmed baking sheet with cooking spray then cover with parchment paper.
- Mix the biscuit dough with the water and cheese. Do not over mix.
- Rub some of the olive oil on your hands and spread the dough out onto the pan. (You may need to reapply the oil, but just keep working at it and the dough will spread. YOU DO NOT NEED ANOTHER BOX!)
- Prebake it for about 10 minutes, then set aside and cool.
- Season the chicken with the Kinders seasoning or Dan-o's. Heat the oil in a skillet over medium heat and cook the chicken for about 4-5 minutes per side or until fully cooked. We grilled them on a smoker, so use whatever cooking method you like. Let it rest for a couple minutes then chop it into bite sized pieces.
- Mix the melted butter with the seasoning packet included in the box and brush on the crust.
- Top it with the Alfredo sauce (jar or homemade). I used about half the jar, but you can use as much as you want. Top that with about 2 to 3 cups of the mozzarella cheese, then the chicken and bacon.
- Bake for another 12-15 minutes or until the cheese is golden brown and bubbly. Serve hot and enjoy with friends!
