I know I say it every time but due to my wife’s tree nut allergy she likes to have an easy way to make pancakes that don’t require a lot of time so we made this. Any premade ready to go pancake or waffle mix may contain tree nuts.

Equipment
- 1 cast iron, or griddle, or pan
Ingredients
- 1 ½ cups all-purpose flour
- 3 ½ teaspoons baking powder
- 1 tablespoon white sugar (or monk fruit sweetener)
- ¼ teaspoon salt or more to taste
- 1/2 teaspoon allspice or cinnamon (this is optional)
- 1 teaspoon bacon grease
- 1 ¼ cups milk
- 3 tablespoons butter melted (make sure it's not boiling hot)
- 1 egg
Instructions
- Sift flour, baking powder, sugar, and salt together in a large bowl.
- In a seperate bowl add milk, melted butter, and egg; mix until smooth.
- Then in the dry bowl make a well and add in the wet ingredents.
- Heat a lightly oiled griddle or pan over medium-high heat. Pancakes cook faster when the griddle or the pan is warmed up first.
- Pour or scoop the batter onto the griddle, using about 1/4 cup for each pancake.
- Cook until bubbles form and the edges are dry, about 2 to 3 minutes. Might be more in high altitude. It's closer to 3 to 4 minutes.Flip and cook until browned on the other side. Do this with the remaining batter.
Notes
This was a great fluffy pancake and pretty easy to make with few ingredients so it was not so overwhelming time-consuming or difficult to make. Since we live in Colorado the batter was very thick at first and I thinned it out with some bacon grease and it added flavor to the pancake.
Also adding in the allspice or cinnamon is just an option I found that it adds more taste and flavor for people who need to watch their blood sugar.
