Breaded Mayo Chicken

Can't go wrong with mayonnaise on chicken you don't even taste the mayonnaise; it just helps the chicken stay nice and juicy. Easy for lots of people or picky eaters.
Equipment
- 1 oven baked sheet
- 1 cooking rack
- 1 tempature reader
Ingredients
- 1 cup mayonnaise Duke's mayo or whatever you have
- 1/2 cup fresh parmesan cheese
- 1/2 teaspoon garlic powder
- 1 teaspoon smoked paprika or you can use paprika
- 1 sleeve Ritz garlic butter crackers or normal Ritz
- salt and pepper to taste
- 1/5 lbs chicken breasts or 3 whole chicken breasts
Instructions
- Preheat oven to 400°f.
- Using a paring knife, cut slits into the chicken breasts. Making sure to not slice all the way through should be only 1-inch cut.
- Create the mayo mixture. In a small mixing bowl add together the seasoning, mayo, smoked paprika, garlic powder, salt and pepper, and parmesan cheese.
- In a different bowl or gallon bag smash/crush the Ritz crackers.
- With your hands, insert the mayo mixture into the chicken, and spread the remaining mixture evenly over the chicken breasts.
- Add the crushed Ritz crackers on top of the chicken breasts, and make sure it's evenly spread.
- Place the chicken breasts onto a baking sheet lined with a cooling rack. Cook 30 to 40 minutes or until the chicken has reached 165°f check with a temperature reader to make sure it's cooked thoroughly.
- Then it's ready to serve and eat!

This is a great dish to serve with french fries, or rice or pasta its a great easy dinner to do and its uses what we have at the house.
