Try this Breaded Mayo chicken for a great family dinner with your picky eaters. I bet they'll love it! And it goes so well with our Cheesy Rice!

Ingredients
1cupMayonnaiseDuke's mayo or whatever you have
1/2cupFresh parmesan cheesegrated
1/2teaspoonGarlic powder
1teaspoonSmoked paprikaor you can use paprika
1sleeve Ritz garlic butter crackersor normal Ritz
Salt and pepper to taste
1/5 lbsChicken breasts about 3 whole chicken breasts
Instructions
Preheat oven to 400°F. Spray baking sheet with nonstick spray.
Using a paring knife, cut a horizontal slit into each chicken breast. Making sure to not slice all the way through; should be only 1-2 inch cut.
Make the mayo mixture. In a small mixing bowl stir together the seasoning, mayo, smoked paprika, garlic powder, salt and pepper, and parmesan cheese.
In a gallon bag smash/crush the Ritz crackers.
With your hands, insert the mayo mixture into the chicken, and spread the remaining mixture evenly over the chicken breasts.
Add the crushed Ritz crackers on top of the chicken breasts, and make sure it's evenly spread.
Place the chicken breasts onto a baking sheet lined with a cooling rack. Cook 30 to 40 minutes or until the chicken has reached 165°F internal temperature.
Then it's ready to serve and eat!
