Birria Tacos

If you’re looking for a rich, slow-simmered meal that basically cooks itself while filling your kitchen with deep, savory spice, this slow cooker birria is it. Using a Birria Bomb seasoning kit, you get all that classic birria flavor, bold, smoky, and slightly spicy, without the complicated prep.

- 1 crockpot
Ingredients
- Main:
- 3 –4 lbs beef chuck roast or beef short ribs / stew meat mix
- 1 Birria Bomb seasoning kit as your flavor base
- 1 sweet large onion quartered
- 5 –6 cloves garlic
- 2 –3 dried bay leaves optional but recommended
- 1 tsp salt adjust depending on kit saltiness
- 4 –6 cups beef broth or water
- For tacos:
- Corn tortillas
- Shredded Oaxaca mozzarella, or Monterey Jack cheese or cotija cheese
- Chopped cilantro
- Diced onion
- Lime wedges
Instructions
- Cut beef into large chunks and season lightly with salt.
- Crock-Pot add beef, add onion, garlic, bay leaves, add 1 Birria Bomb seasoning (follow kit strength—start light if unsure)
- Pour in beef broth or water until the meat is just covered.
- Slow cook for 8 hours on low heat
- Shred the meat
- Remove beef, shred with forks, then return it to the broth (consommé).
- Then assemble the taco however you want.
