I realized this has been done thousands of times, but its worth repeating. We used our own cheesy bread recipe for this, but you can use whatever type of bread you want. This is a great go-to if you are out of ideas or just want something quick and easy. Sometimes it’s the simple things that are fantastic!
Eggs on Cheesy Toast

Part of the point of this recipe is to start with a dish that's really simple and basic and dress it up! You can take this recipe and make it your own breakfast special by adding cooked bacon or sausage, green onions, a different special cheese or toast, salsa, or whatever! Make it special and delicious!
Ingredients
- 4 Eggs
- 2 slices Cheesy bread or your choice of bread
- 2 slices American cheese or cheddar or whatever you prefer
- 1 tablespoon Butter
- Salt and pepper to taste
- Splash of water
Instructions
- Whisk the eggs and add salt and pepper to taste. In a small saucepan, sprayed with nonstick spray, cook the eggs until they are about 60% done (they will still be shiny and loose) for about 5 to 7 minutes.
- Turn off the heat, but leave the pan on the burner. Top with 1 or 2 slices of American cheese, a splash of water to add some moisture, and cover with the lid. (this allows the steam to cook the eggs to finish and lightly melts the cheese.)
- Toast 2 slices of toast until lightly golden brown or toasted how you would like.
- Once the toast is cooked add some butter on top of it and spoon on the cooked eggs and it’s ready to serve.
Notes
- I have to say this tasted like eating Cheez-it crackers underneath some cheesy eggs was so easy to make and so tasty! It’s our new addiction.
- We did scramble the eggs but you can do over easy eggs or sunny side up depending on your preference.
