Equipment
- Air Fryer
- 9 x 13 baking sheet
Ingredients
- Poutine Gravy:
- 6 Tablespoons Unsalted butter
- 1/4 cup Unbleached all-purpose flour
- 30 oz Beef broth
- Salt and Pepper to taste
- 1 clove Garlic minced
- 1/2 Sweet onion minced
- Ingredients
- Frozen French Fries
- Cheese Curds
- Beef 80% to 20%
- 3 cups Whole milk warmed to just under simmer
- 3 Tablespoons Flour
- 2 teaspoons Smoked paprika
- 2 teaspoons Badia seasoning
- 4 teaspoons Red Wine
- Lawrey's seasoned salt or just salt and pepper
Instructions
- Preheat oven to 400°. Spray a baking sheet with nonstick spray.
- Start cooking the frozen French fries in the Air Fryer according to their package. (This will take the longest time so you want to get this started first).
- In a medium saucepan over medium heat, melt the butter. Cook the chopped onions and garlic till softened. Reduce heat.
- Then add in the flour and stir for about 3 to 4 minutes until the smell of flour is gone.
- Then slowly whisk in the warmed milk.
- Add the rest of the seasonings along with the wine. and slowly stir in the beef stock and make sure to mix with a whisk. Reduce heat to low to keep warm.
- In a different frying pan, add the beef and some Lawrey's seasoned salt.
- Cook until the meat is no longer pink. Then drain the grease from the burger.
- Spread the cooked French fries on the bottom of the baking sheet, sprinkle the ground beef on top, then the cheese curds, then last ladle the gravy on top.
- Place the pan in the oven to cook just to melt the cheese a little bit, the goal is to keep the shape of the cheese curds but not 100% melted cheese. This will only take maybe 2 to 5 minutes.
- Serve and enjoy!
Notes
- This can be made with whatever you have leftover. You can make this with chicken or turkey (and matching broth) instead of beef; add mushrooms or onions, whatever -- switch it out!
- This is especially delicious when you use our Basic Brown Stock to start the gravy!
