Cheese Curds
Beef 80% to 20%
3cupsWhole milkwarmed to just under simmer
3TablespoonsFlour
2teaspoonsSmoked paprika
2teaspoonsBadia seasoning
4teaspoonsRed Wine
Lawrey's seasoned salt or just salt and pepper
Instructions
Preheat oven to 400°. Spray a baking sheet with nonstick spray.
Start cooking the frozen French fries in the Air Fryer according to their package. (This will take the longest time so you want to get this started first).
In a medium saucepan over medium heat, melt the butter. Cook the chopped onions and garlic till softened. Reduce heat.
Then add in the flour and stir for about 3 to 4 minutes until the smell of flour is gone.
Then slowly whisk in the warmed milk.
Add the rest of the seasonings along with the wine. and slowly stir in the beef stock and make sure to mix with a whisk. Reduce heat to low to keep warm.
In a different frying pan, add the beef and some Lawrey's seasoned salt.
Cook until the meat is no longer pink. Then drain the grease from the burger.
Spread the cooked French fries on the bottom of the baking sheet, sprinkle the ground beef on top, then the cheese curds, then last ladle the gravy on top.
Place the pan in the oven to cook just to melt the cheese a little bit, the goal is to keep the shape of the cheese curds but not 100% melted cheese. This will only take maybe 2 to 5 minutes.
Serve and enjoy!
Notes
This can be made with whatever you have leftover. You can make this with chicken or turkey (and matching broth) instead of beef; add mushrooms or onions, whatever -- switch it out!
This is especially delicious when you use our Basic Brown Stock to start the gravy!
