This chicken salad sandwich is creamy, flavorful, and easy to make with simple ingredients you probably already have on hand. It’s the kind of recipe that works just as well for a quick lunch as it does for meal prep.

Equipment

  • 1 mixing bowl

Ingredients

  • 2 -3 cups pork chops cooked & finely chopped (I cut boneless chops leftover from the night before's dinner into 1 inch chunks & pulse them in the )
  • 1/2-3/4 cup red onions or 4 green onions sliced or 1 -2 shallot, diced
  • 1/2 cup carrot large shreds
  • 2 teaspoons lemon juice
  • 3/4-1 cup mayonnaise
  • 1 teaspoon celery seeds or 1/2 cup chopped fresh celery
  • 3/4 cup dried cranberries
  • 1/4 cup pecans chopped
  • 1/2 teaspoon Curry hotsauce 
  • Shredded cheese (as much as you want)
  • 1 Asian pear chopped (pear-apple)
  • salt & pepper to taste

Instructions

  • Mix all the ingredients together in a large bowl until fully combined.
  • Serve right away, or refrigerate for 1–2 hours to let the flavors blend and deepen.
  • This is especially good on cracked wheat bread, but it also tastes great on sourdough or a buttery croissant.
