We love the flavor the roasted garlic gives to our easy mashed potatoes!  This is such an easy and flavorful, creamy side dish, its one of our favorites, and quick enough to make for any evening meal!

Easy Instant Pot Roasted Garlic Mashed Potatoes

These potatoes are super easy and quick and so delicious with the roasted garlic, or even regular garlic.

Equipment

  • Instant Pot 8 quart
  • Wired potato masher

Ingredients

  • 6 Pounds Potatoes 5 to 6 medium Sliced (and peeled if desired)
  • Water to Cover Potatoes About 5-6 cups
  • 1/2 Cup Unsalted Butter cubbed 1 stick
  • 1/2 Cup Sour Cream
  • 1/2 Cup Milk warmed to room temperature
  • 1 teaspoon Onion Powder
  • 2 teaspoon Badia complete seasoning
  • 1 teaspoon White Pepper
  • 4 Teaspoons Salt
  • 1 teaspoon Roasted Garlic Powder Or Garlic Powder (option if you are not using the roasted full garlic clove then add 2 teaspoons of garlic powder)
  • Optional
  • 1 Full garlic bulb
  • Dash of avocado oil

Instructions

  • This step is optional if using a full fresh garlic bulb. Preheat the oven to 350° . For the roasted garlic, cut off the top end of the whole garlic, sprinkle garlic bulb with a dash of oil, then wrap in tin foil. Bake for about an hour. Peel when cooled down.
  • We used Yukon Gold potatoes, and left the skin on. Quarter the potatoes. Place the sliced potatoes into the instant pot.
  • Cover with water until you reach the 1/2 mark on the instant pot.
  • Place the lid on the instant pot and set the valve to seal. Check your model for more information.
  • Cook on high manual pressure for 8 minutes.
  • Quick release the pressure from the pot.
  • Drain the water from the potatoes, and leave the potatoes in the pot.
  • Add the salt, white pepper, Badia, garlic powder (or fresh roasted garlic), butter, room-temped milk and sour cream to the potatoes. Use the wire masher and mash until smooth.
  • Eat and enjoy!
