Creamy Garlic Potatoes

What could go wrong with potatoes, garlic, cheese, and butter! Such a delicious side dish, and easy to put together.
Equipment

Ingredients
- 5 pounds Yukon gold potatoes
- 2 Tablespoons Fresh Chives finely chopped.
- 1 teaspoon Kinder's Wood Fired Garlic or roasted garlic powder
- 1 teaspoon Smoked paprika
- Salt and pepper to taste
- 1 block Cream cheese 8 ounces
- 1 stick Unsalted butter
- 1 bag Mozzarella cheese
- 2 Whole garlic bulbs (you can do more if you want)
Instructions
- Wrap each potato in aluminum foil and bake in the oven at 350 for 1 hour or until soft.
- Chop the tops off the whole garlic heads to expose the tops of the cloves. Drizzle each head of garlic with oil and sprinkle with salt. Wrap the garlic in aluminum foil . Cook the garlic for 1 hour in the oven while the potatoes are baking.
- Spray the baking dish with nonstick spray. When the potatoes are done, unwrap and place into the baking dish. Make 4 slices into each potato halfway through. Set aside while you assemble the topping.
- Meanwhile, turn the oven up to broil.
- Squeeze half of garlic out and into a food processor, add cream cheese and mozzarella cheese. Process the cheese mixture until well combined.
- Carefully divide the cheese mixture and spoon onto the potato wedges.
- Broil the potatoes on high 2 to 3 minutes or until a crust has formed. Remove the potatoes from the oven.
- In a small microwave safe dish, melt butter, chives, and spices. Drizzle the garlic butter over the potatoes. Serve and enjoy!
