We just love all of the different types of chili, and this one is so easy to put together in the crock pot before you head out to work!  Its one of our favorites and you can crank up or down the spice according to your taste.

Great for the cold winter month with Tortilla chips or Fritos chips! This recipe was adapted from Jennifer Fishkind's Crack Chicken Chili recipe.

Ingredients

  • cups Chicken broth
  • 1 tablespoon White miso
  • 1 can Southwest corn with poblano and red peppers do not drain 15.25 ounce can
  • 1 can Mild Rotel diced tomatoes and green chilies do not drain 10 ounce can
  • 1 packet Ranch seasoning mix 1 ounce packet plus 2 Tablespoons if you have it
  • 1 Tablespoon Onion powder
  • 1 Tablespoon Garlic powder
  • 1/2 Tablespoon Chili powder
  • 1 Tablespoon Badia Complete powder
  • 1 teaspoon Kosher salt
  • 1 teaspoon Cracked black pepper
  • 3 Medium-sized boneless skinless chicken breasts see notes
  • 1 can Butter beans, drained and rinsed 15.25 ounce can, see notes
  • 1 8-ounce package of cream cheese cubed
  • 1 cup Cheddar cheese optional

Instructions

  • Spray inside crock pot liner.
  • Place the chicken breasts in the bottom then sprinkle butter beans on top of the chicken.
  • On top of the chicken and beans in the crockpot, add the chicken broth, southwest corn, Rotel, ranch mix, onion powder, chili powder, salt, and pepper to crock pot. NOTE: all except the cream cheese and shredded cheese -- these will be added after cooking.
  • Cook on high temperature for 4 hours, or 7 hours on low temperature.
  • When the chili has finished cooking, remove the chicken breasts and shred,
  • Stir the cream cheese in until the it is melted and evenly distributed. Return the chicken to the crock pot. and stir till fully mixed.
  • Stir in some of the shredded cheese if desired, or sprinkle on top of each bowl.

Notes

  • In place of the chicken thighs, you can use ground chicken, turkey or even ground beef if you prefer.
  • We like the butter beans in this chili, but you can use black beans or great northern or cannellini beans; whatever you prefer.
  • You can add a small can of chopped green chilis or jalapenos if you like that flavor also.
