Instructions
Pre-heat oven to 350ºF.
Chop bacon into 1 inch segments, then fry in cast iron pan till crisp. Remove the bacon to a plate lined with paper towel to drain. Use the grease to make sure the pan is coated (or spray with nonstick spray) so the quiche won't stick, discard any extra.
In a bowl, whisk together: eggs, whole milk, garlic powder, and sour cream. Season with salt and black pepper .
Place the bacon, ham, potatoes cheese and onion into the greased cast iron pan.
Pour the egg mixture into the pan over the meats and potatoes and cheese.
Bake for 45 minutes, until a knife inserted into the middle of the quiche comes out clean or with a few crumbs.
Notes
We found that 4 eggs was not enough; it looked too dry especially with the potatoes included. We ended up using 6 eggs total.
You can substitute other meats or veggies or whatever you have available. Try asparagus, spinach, breakfast sausage or whatever! Just make sure the meats and veggies are cooked before they go into the quiche.
