Yes, another egg-fired rice recipe (everyone roll your eyes)! This recipe is very flavorful when our Everyday Rice is used as the base, and is super simple to make. Great as a light meal or as a side dish.
Ingredients
2cupsLeftover cooked Ricecold
1packetFrozen mixed veggiesor whatever veggies you prefer
1/4cupLight Soy Sauce
2TablespoonsMirin
1teaspoonMSG
4Eggs
2TablespoonsVegetable oilany cooking oil will do
Instructions
In a large frying pan over high heat, add 1 Tablespoon oil. Heat the oil until hot.
Add the eggs and cook, stirring continuously breaking the eggs into small pieces. Remove the eggs from the pan and set aside.
Add the rest of the oil to the pan. Add the rice and cook for 2 - 3 minutes stirring constantly.
Add the vegetables and continue to cook the rice mixture for 5 - 10 minutes or until vegetables are warmed through.
Add the eggs, soy sauce, mirin, and MSG. Stir to Combine and cook for 2 more minutes.
Remove from heat and serve.
Notes
We use a packet of frozen vegetables which includes carrots, corn, and green beans, but you can switch this out for whatever already cooked veggies you prefer.
