Equipment
Oven-safe 9 x 13 baking dish
Ingredients
1/2cupButter
1 1/2cupsGranulated sugar
3TablespoonsUnsweetened cocoa powdernot Dutch process
2cupsSelf-rising flour
1cupWhole milk
2teaspoonsVanilla extract
Topping
2cupsGranulated sugar
1/2cupUnsweetened cocoa powder
3cupsBoiling water
Instructions
Preheat the oven to 350º F.
Place the salted butter into a 9 × 13 oven-safe baking dish into the oven for the butter to melt. Make sure to watch it so it just melts.
When melted, remove the dish from the oven and set aside. Allow the butter to cool down while you mix the recipe; you don't want it to bubble.
Now in a mixing bowl, mix together the sugar, cocoa powder, flour, milk, and vanilla extract for the batter. Slowly pour the mixture into the baking dish on top of the melted butter. DO NOT STIR. (You want to make sure it's layered.)
To mix the topping:
In a separate bowl, mix 2 cups sugar and ½ cup cocoa powder. Sprinkle this topping mixture on top of the batter, again DO NOT STIR. Pour the boiling water over the sugar mixture topping.
Bake for 35 to 40 minutes or until top is set. The bottom of the cobbler will still be loose. Allow to cool for 15 to 20 minutes.
While still a little warm, top with soft serve vanilla ice cream (optional) and eat and enjoy!
