Ingredients

  • 2 1/4 Cups All Purpose Flour
  • 1 Tablespoon Baking Powder
  • 3 Tablespoons Sugar
  • 1/2 teaspoon Salt
  • 1 teaspoon Cinnamon
  • 1 teaspoon Allspice
  • 2 Large Eggs
  • 1/2 Cup Applesauce
  • 2 Cups Milk
  • 1 teaspoon Vanilla Extract
  • 1 Tablespoon Maple Syrup

Instructions

  • Preheat your waffle iron, spray it with nonstick cooking spray, and let it warm up.
  • In a large bowl whisk together the flour, baking powder, sugar, salt, cinnamon, and allspice.
  • In a separate medium bowl mix together the eggs, applesauce, milk, and vanilla extract.
  • If you want to you can separate the egg whites into a small bowl and beat with a hand mixer until stiff peaks form, then fold into the wet mixture. (This will make a fluffier waffle. If you break your eggs yolk with the whites just mix them together and don't worry about this step.)
  • Pour the batter with a 1 cup measure or ladle onto your hot waffle iron and drizzle with a tablespoon of Maple Syrup, then cook until they are slightly browned on both sides (according to waffle maker instructions).
  • Serve immediately and top with whatever you want like butter, syrup, powdered sugar, bacon, chicken, or any other toppings.

Notes

  • I want to note sometimes when you are making a recipe, something can go awry. I was trying to separate the egg and the egg white and unfortunately the egg yolk broke. Since I didn't want to waste it, I just mixed them together and they still tasted fantastic.
