Beer Cheese Soup

Ingredients

  • 2 Tablespoons Vegetable oil
  • 2 Medium carrots diced
  • 2 Stalks of celery diced
  • 1 Large sweet onion diced
  • 12 oz Beef smoked sausage sliced
  • 1 Tablespoon Smoked paprika
  • 3 cloves Garlic minced
  • 2 Tablespoons Butter
  • 2 Tablespoons Flour
  • 3 cups Heavy cream or part half and half
  • 3 cups Chicken stock
  • 12 oz Beer 805 or other blond ale
  • 12 oz Coors banquet or other American lager
  • 2 lbs Cooked potatoes diced bite sized
  • 8 oz Velveeta cheese
  • 8 oz Sharp cheddar cheese
  • Salt and pepper to taste
  • 1 pound Cooked bacon crumbled, for topping

Instructions

  • In a large pot or Dutch oven, add the oil, carrots, celery and onion. Sauté till tender.
  • Add the smoked sausage and paprika to the pot and continue to cook till starting to brown, about 5 minutes. Add the garlic and cook for 1-2 minutes more.
  • Add the butter and stir till melted, then add the flour and cook and stir till the flour smell fades, about 5 minutes.
  • Slowly stir in the cream, chicken stock and beers and cook till the mixture starts to thicken. Add the potatoes and lower the heat and simmer to allow the flavors to meld, about 10 minutes.
  • Slowly stir in the cheeses and adjust the seasoning with salt and pepper. Remove from heat and serve, sprinkling crumbled bacon on top of the bowls.
