This recipe is easy and delicious for when you want a nice comforting cup of ramen. You can make it as fancy or simple as you like!
Ingredients

1TablespoonFresh garlicminced

3TablespoonsLow-sodium soy sauce
2TablespoonsMirin
1TablespoonChicken bouillon
1Tablespoon Garlic bullion
6cupsChicken stock
2TablespoonsFish-saucesee notes
2teaspoonsMSG
2teaspoonsRamen packet seasoning
2TablespoonsBrown rice miso
4Eggs
1Whole ham steakdiced
2Bunches dry ramen noodles
1Bunch green onionschopped (optional)
Instructions
Heat the oil in a large sauce pot over medium heat. Add the garlic and ginger, and cook for a few minutes until softened and fragrant. Add the soy sauce and mirin, and stir to combine. Cook for another minute.
Add the stock, bullion, and other seasonings and bring to a boil. Simmer gently for another 20 minutes.
Fill a medium mixing bowl with ice and water and set aside to cool the eggs when they are done.
Bring a small pot of water to a boil. Gently lower the eggs into the water. Cook the eggs for about 7 minutes in the boiling water. Carefully remove the eggs and move to the ice bath for 3 minutes. Then remove and carefully peel the shells off and cut the eggs in half lengthwise.
Add the ham steak to the simmering broth until it gets warmed.
Immerse the Ramen noodle bunches into the stock and fully cook, this should take about 3 to 5 minutes.
Ladle noodles and broth into your bowl and top with egg halves and green onion.
Notes
The bullion brand we like to use is Better than Bullion.
For the Miso, you can use whatever flavor you like, if you want a nice flavor the Hikari Haccho miso is really good, and same with the red miso. Light or white miso has some flavor but not a lot.
We like the Three Crabs Brand Fish Sauce. It has 3 crabs on the bottle the best fish sauce at an HMart or Pacifica Ocean Market.
Make sure not to overcook the ramen -- you want them al dente and they will cook pretty fast.
To make the eggs easier to peel, you can add a small amount of white vinegar and baking soda to the water when boiling.
