This is a fun to make pressed rice dish that you can have as a snack, fun lunch, appetizer or even dinner as you watch some anime.

Ingredients
3 ½cupsCooked Japanese short-grain rice*
¼cupBrown rice miso
1-2teaspoonsSalt
2cupsCooked baby bella mushroomschopped small
Cooked seasoned porkfor filling; chopped small
Colby jack cheesecut into small cube shapes
American Cheese or smoked gouda cheesecubed
Optional 4-5 nori sheetscut into thirds or strips
Optional sesame
Instructions
Follow the instructions in our Everyday rice post, or make plain Japanese short grain rice.
Keep rice warmed while you assemble the rest.
In a medium bowl, add the cooked mushrooms, cooked rice and add 1 Tablespoon of miso.
Take a couple of Tablespoons of the rice and shape into a flat patty, like a tiny burger. Top with pork pieces and/or cheese of your choice. Cover the stuffing with additional rice, and shape into a small stuffed triangle shape. An onigiri mold makes this process easier to hold the shape better after everything is stuffed, but its not absolutely necessary.
Wrap with the nori sheets around one side, and top it with sesame for added crunch if desired.
Notes
The onigiri mold was a lifesaver, and made making these in batches much easier. We were feeding about 5 to 6 people and wanted it to be kind of a make-your-own with your own flavors and choices. This was a fun group activity and delicious!
You can choose your own stuffing -- the list is endless. Try with salmon, tuna, cucumber or other veggies or whatever! But don't overstuff, or they'll start falling apart.
