This is a delicious nut-free version of traditional Pesto sauce. If you have fresh garden basil, you can't beat homemade pesto with everything -- pasta, as a marinade for chicken or fish, in dips, or even spread on a great bread -- there are so many uses!

Ingredients
4clovesGarlic roughly chopped
2cupsPacked basil leaves
1/2cupOlive oil or more as needed
1/2cupGrated Pecorino Romano cheese
1/2cupGrated Parmesan cheese
1Lemon, zest
1/2Lemon juiceabout 1 Tablespoon
Freshly ground pepper to taste
Kosher salt to taste
Instructions
Place the garlic, basil, and olive oil in a food processor and pulse until everything is roughly chopped. Then add the pepper and process, until everything is well blended. If it is too thick, add some more olive oil to thin it out.
Final step add the cheese and pulse until blended in. Season with salt to taste.
