Easy Tree Nut-Free Pesto

This is a delicious nut-free version of traditional Pesto sauce. If you have fresh garden basil, you can't beat homemade pesto with everything -- pasta, as a marinade for chicken or fish, in dips, or even spread on a great bread -- there are so many uses!

Ingredients

  • 4 cloves Garlic roughly chopped
  • 2 cups Packed basil leaves
  • 1/2 cup Olive oil or more as needed
  • 1/2 cup Grated Pecorino Romano cheese
  • 1/2 cup Grated Parmesan cheese
  • 1 Lemon, zest
  • 1/2 Lemon juice about 1 Tablespoon
  • Freshly ground pepper to taste
  • Kosher salt to taste

Instructions

  • Place the garlic, basil, and olive oil in a food processor and pulse until everything is roughly chopped. Then add the pepper and process, until everything is well blended. If it is too thick, add some more olive oil to thin it out.
  • Final step add the cheese and pulse until blended in. Season with salt to taste.
