Creamy White Chicken Enchiladas

Jazz up this recipe by adding chopped jalapenos and onions or combining different cheeses! Great when served with salsa, guacamole and additional sour cream on the side!

Equipment

  • 1 9 by 13 baking dish
  • 1 sauce pan

Ingredients

  • 2 cups Shredded cooked chicken we used a store-bought rotisserie chicken
  • 2 cups Shredded Monterey Jack cheese separated by cups
  • Salt, pepper to taste
  • Adobo seasoning to taste
  • 14 Flour tortillas
  • 3 Tablespoons Butter
  • 3 Tablespoons All-purpose flour
  • 2 cups Chicken broth or chicken bullion
  • 1 cup Sour cream
  • 4 ounces Diced green chiles one can, do not drain
  • 1 can Cream of mushroom soup or Cream of Chicken

Instructions

  • Preheat oven to 350°. Spray a 9 x 13 baking dish or pan with nonstick spray.
  • Put shredded chicken into a large bowl.
  • Add 1 cup of the Monterey Jack cheese to the chicken and mix well; set aside.
  • To assemble the sauce, melt the butter in a saucepan over medium heat, add the flour and stir until smooth.
  • Slowly stir in the 2 cups of broth and heat till thickened.
  • Slowly stir in the 1 cup of sour cream, the 1 can of cream of mushroom soup, and the 1 can of mild green chilies.
  • When the mixture is warmed through, remove from heat.
  • Take the 9 x 13 baking dish and spread a little of the sauce mixture onto the bottom so the enchiladas don’t stick.
  • Spoon enough of the chicken and cheese mixture into each flour tortilla so that it can be rolled up. Place into the 9 x 13 baking pan. Repeat with tortillas until the dish is full. Spoon the sauce over the top of the tortillas.
  • Sprinkle the top with the remaining 1 cup of Monterey Jack Cheese.
  • Cover the dish with foil and bake in the oven at 350° for 20 minutes. Remove the foil and bake uncovered for 10 minutes more (for a total of 30 minutes).

Notes

  • You can jazz this recipe up by adding a little chopped onion or jalapenos to the chicken and cheese mixture if you want. Or try a mixture of the Monterey Jack cheese and cheddar jack or any other kind you like!
