Due to my wife’s severe tree nut allergy, (I know it’s in every recipe) she never had Pesto sauce because they usually have pine nuts, and I couldn’t wait to make her a homemade version. Now she wants it all day every day.
Equipment
1 food processor
Ingredients
4clovegarlic roughly chopped
2cuppacked basil leaves
1/2cupolive oil or more as needed
1/2cuptablespoons finely grated Pecorino Romano cheese
1/2cupparmesan cheese
1zestlemon
1/2lemon juiced
Freshly ground pepper to taste
Kosher salt to taste
Instructions
Place everything the garlic, basil, and olive oil in a food processor until everything is roughly chopped. Pluse as needed. Then add the pepper and process, until everything is well blended. If it is too thick, add some more olive oil will thin it out.
Final step add the cheese and pulse until blended in. Season with salt to taste.
