Ham and Soft Egg Ramen

Something easy and simple for when you want some ramen you can make it fancy or you can make it easy. This is inspired by the movie Panyo.
Ingredients
- 6 cups chicken stock
- 1 Tablespoon cooking oil
- 1 Tablespoon each Chicken bouillon and Garlic bullion see notes
- 3 Tablespoons low-sodium soy sauce
- 1 Tablespoon fresh garlic minced
- 2 teaspoons fresh ginger minced
- 2 Tablespoons mirin
- 2 Tablespoons fish-sauce
- 2 teaspoons of msg
- 2 teaspoons of ramen packet seasoning see notes
- 2 Tablespoons of brown rice miso
- 4 soft boiled eggs
- 1 whole ham steak cut into chunks
- 2 bunches of dry ramen noodles
- 1 bunch green onions chopped (optional)
Instructions
- Heat the oil in a large sauce pot over medium heat. Add the garlic and ginger, and cook for a few minutes until softened or until fragrant. Add the soy sauce and mirin, and stir to combine. Cook for another minute.
- Add the stock and bullion. stir and bring to a boil. Simmer gently for another 20 minutes.
- Fill a medium mixing bowl with ice and water.
- Bring a small pot of water to a boil. Gently lower the eggs into the water. Cook the eggs for about 7 minutes in the boiling water. Carefully remove the eggs and move to the ice bath for 3 minutes.
- Cut the ham steak up and add to the boiling broth as it gets warmer.
- Remove the eggs from the ice bath and carefully peel the shell.
- The Ramen noodles take about 3 to 5 minutes to fully cook and can cook in the broth.
- Then when everything is ready, add to your bowl and assemble.
- top with chopped green onion (optional).
Notes
- The bullion brand we like to use is Better than Bullion.
- Notes cook the eggs for 7 minutes, 6 minutes makes the eggs still too soft and uncooked. So keep an eye on the time I think the past 9 minutes almost make the egg too hard.
- Miso, you can use whatever flavor you like, if you want a nice flavor the Hikari Haccho miso is really good, and same with the red miso. Light or white miso has some flavor but not a lot.
- Get the Three Crabs Brand Fish Sauce. It has 3 crabs on the bottle the best fish sauce at an HMart or Pacifica Ocean Market.
- The ramen cooks super fast so be careful to not overcook. Pull the noodles out when al dente since it will continue to cook.
- Adding a small amount of white vinegar and baking soda to the water when boiling the eggs helps when peeling the eggs.
- Older eggs are way easier to peel than new eggs. We have had allot of success with Costco cage free eggs (brown eggs).
